What is Modified Atmosphere Packaging (MAP) ?
Modified Atmosphere Packaging is a food preservation method that involves replacing the air inside a package with a specific mixture of gases—primarily carbon dioxide (CO₂), nitrogen (N₂), and oxygen (O₂). This modified gas composition slows down the growth of spoilage microorganisms and oxidation processes, helping maintain the product’s taste, texture, and appearance for a longer time.
Each gas serves a unique role:
